Tamarind lends a rich flavor, with notes of raisin and dried fruit, to this versatile vinaigrette.

Ingredients

  • ¼ cup rice vinegar

  • 2 tablespoons tamarind puree

  • 1 tablespoon pure maple syrup

  • 1 tablespoon minced shallot

  • ¼ teaspoon salt

  • ⅛ teaspoon black pepper

  • ⅓ cup extra-virgin olive oil

Preparation

  1. Gather the ingredients.

  2. Add rice vinegar, tamarind puree , maple syrup, shallot, salt, and pepper into the bowl of a small food processor or blender. Pulse to combine.

  3. With the unit running, stream in the oil a bit at a time, until thoroughly emulsified.
