Snake fruit jam is a delightful preserve made from the exotic and tangy snake fruit, boasting a unique flavor profile that combines sweetness with a hint of tartness, creating a truly exotic spread.

Ingredients

  • 1.5 cups salacca puree

  • 1 tablespoon maple syrup or other sweetener (can be increased/decreased, to taste)

  • 1/2 lemon juice (can be increased/decreased, to taste)

Preparation

  1. In a medium saucepan, add salacca puree and lemon juice and heat over medium-high heat for 3-4 minutes.

  2. Bring the mixture to a boil, then reduce the heat slightly and heat for 2-3 more minutes.

  3. Add the maple syrup (or sweetener of your choice) towards the end of the cooking time and stir well. Feel free to adjust the amount of lemon juice/sweetener at any time.

  4. Remove from the heat and either serve immediately or allow to cool and use later.
